Ingredients:
- 1 kilo of guava (weigh them without the hearts)
- 3/4 kilo sugar
- 5 tablespoons of water
Preparation:
Wash the guavas, remove the black spots on the top and bottom, slice them in half, remove the hearts and set aside.
Cut the pulp in four pieces and place it in a saucepan with the sugar over medium flame, stirring constantly.
Crush the hearts in a blender with the water to remove the seeds. Strain the contents of the blender and add it to the saucepan, allowing the mixture to reduce and dry out. Remove from the heat and let set overnight.
The following day form the paste into small balls (approx. 1″). Roll in sugar for a sweeter “pearl”.
